For a great tasting product with some unusual names, be sure to try the Swamp Stuff line, including Blue Tick Dressing, which has no cholesterol.

For that summer-time favorite grilling recipe, the Bone Sucking Sauce is a delightful treat. It is a great sauce for anything from chicken to beef. It is also fat free.

If you desire pickled okra, sweet corn relish, or watermelon rind pickles, we carry them also.

On the lighter side, we have popcorn on the cob. A fun treat for any age.

Also available is the liquid cinnamon flavoring from Appalachian Hot Nogs. This is delicious over ice cream, mixed in apple cider, or in a glaze for hams or try the Ameretto liquid flavoring.

Country Hams

We carry some of North Carolina's finest country hams. An average size is 16 to 20 pounds.

Whole hams can be pepper coated or cured with sugar or salt. They are delicious pan fried or baked whole and a true Southern treat. Today, the Country Ham business is an important part of the southern economy.

Proper handling is important. Be sure to store your ham in a dry, cool place and keep refrigerated after slicing.

Recipe for Fried Country Ham

Slice ham to 1/4 inch or desired thickness. Trim excess fat and place fat in frying pan. Heat at medium temperature until grease barely covers bottom of pan. Remove fat. If you prefer a less salty taste, soak the ham slices in water for about 10 minutes before cooking. Place ham in frying pan and reduce heat to low. Cook ham 6 to 8 minutes, turning frequently. Ham will be done when it is light brown in color and when fat is translucent. Drain ham and serve.
